What wines for Caribbean Christmas?
Christmas is beautiful, Christmas it's magic, but more important Christmas need to be organized ! The Christmas dinner with the whole family, the old grumpy aunt you see only once in the year and the grandma who kiss you all the time for no reason, it is coming soon. But in order to really take advantages of this exceptional moment with uncle Richard who will tell you bad jokes with a questionable sens of humor, come on don't tell us you don't have of them in your family... Anyway you need to find the appropriate wine for them and for you, of course, to fit the meal and also for the Aperitif. As every year, many bloggers will tackle the madness of wines on the Christmas tables. As a new blogger wanting to attract visitors, we will do exactly the same thing below. You read us for this reason, no? But maybe not only for that and you're totally right, so don't you dare leaving this page and finish this article you won't regret it.. or maybe.
To differentiate ourselves, because we have to differentiate ourselves from our colleagues, we will try our best to advise the wine pairing for our Caribbean friends. Indeed, this isn't because it's hot at their country, they're not celebrating Christmas, we assure you.
To begin with, Marie, our culinary journalist, has scoured for you a hundred exotic recipes to offer you the one that will delight your guests perfectly. Here it is:
Ingredients
- 1 fired ham
- 8 pineapple slices
- 4cl of old rum
For the glazing
- 25cl of orange juice
- 200G of honey
- 1 teaspoon of cinnamon
- ½ teaspoon of pepper
Preparation
Put the oven at 200°C.
In a bowl mix together, the honey, the orange juice, the cinnamon and the pepper.
Remove the ham rind to a thickness of 0,5cm. Put the ham in an oven-proof dish.
Cut the top of the ham. Baste the ham with the mixture prepared previously. Put the 8 pineapple on the top of the ham. Spray with the pineapple syrup and the old rum. Put the dish in the oven during 30min. Don’t forget to spray the ham during the cooking with the juice of the dish.

Well, I think we'll all agree to admit that now we are hungry! But the hard part is still coming ladies and gentlemen. The most delicate moment of the meal's going to happen. The crucial moment, one that everyone dreads and his famous question on which many philosopher have run into trouble ?! Which wine will go with this dish?
